2008 Cabernet Sauvignon

This wine is a selection of barrels from our best estate cabernet sauvignon blocks - the top part of our bottom paddock vineyard as well as the 1974 plantings of cabernet sauvignon and malbec vines. Each block was picked separately at optimum fruit maturity and fermented as 1-2 tonne ferments. 

Sorted, destemmed and crushed, the fermentation regime for each batch was based on the ripeness of the seed and grape tannins together with the block's history. The old cabernet block and top half of the bottom paddock block were fermented on skins for a week longer than the other blocks, with the aim being to extract as much of the ripe, biscuity tannins as possible to provide a backbone to the assembled wine. The wine was pumped over twice a day, 3 times daily during the peak of fermentation, with déléstages as necessary.  

Maturation was in 100% French oak for approximately 15 months of which 50% was new. 

The wine was assembled in June 2009 and comprises approximately of 15% malbec and 85% cabernet sauvignon. 
 
Bottled in August 2009, approximately 120 dozen produced.
