2008 Cabernet Sauvignon Shiraz

This wine is a blend of cabernet sauvignon and shiraz with the aim being to produce a soft, juicy style of wine with bold, fruity flavours, designed to complement a casual BBQ. It is approximately 70:30 cabernet sauvignon shiraz, matured in about 20% new oak.  

The shiraz was fermented with whole berries to give the wine a fruity lift of strawberries and red berry fruits and pressed off to tank at around 2 baume where it finished fermentation, while the cabernet sauvignon was worked a little harder and enjoyed a few days on skins post fermentation. The batches were matured separately in barrel for about 13 months and then blended in June 2009. 

Bottled August 2009, approximately 100 dozen produced.
